BENEFITS:
High in protein and calcium.
A good source of vitamin B 12
Cheddar and other aged cheeses may fight tooth decay.
DRAWBACKS:
Most are particularly high in saturated fat and sodium.
Some may trigger migraines or allergic reaction in susceptible people.

Cheese is very unique and delicious food, cheese is looks like butter but its taste is different. One of our most versatile and popular foods, cheese is used for everything from snacks and appetizers to main courses and desserts. Its and ancient food than can be made from almost any type of milk, that of cows, sheep, goats, mater, yaks, camels even buffaloes.
Cheese is made by culturing milk with bacteria, then adding rennin or another enzyme to curdle it. When the liquid whey is drained away, the remaining curds can be used as cottage or farmer’s cheese, or the curds can be mixed with other ingredients, injected with special molds or bacteria, soaked in wine or beer, pressed or molded, or smoked or aged to make any of hundreds of different cheeses.

On average it takes four quarts of milk to make a pound of cheddar, Muenster, Swiss or other firm cheese. A typical one ounce serving of cheese contains hundreds calories, 180 mg of calcium, and 8g of fat. Cottage cheese has the fewest calories about 90 in a half cup serving, but is has only half the calcium of milk. Cream cheese, Brie, and other soft cheeses are comparable to hard cheese in calories and fat, and they also have much less calcium.

MODERATE CONSUMPTION:
Despite the high nutritional content of cheese most people especially those with a weight or cholesterol problem should use it as an occasional treat or garnish rather than as a staple food. Exceptions include children and pregnant women, who need the extra calories and calcium, adolescent going through a growth spurt and thin women threatened by OSTEOPOROSIS, a weakening of bones especially common in older women. Many people who cannot digest milk because of lactose intolerance can eat cheese especially the hard types the bacteria and enzymes used to make cheese also break down a reasonable amount of the lactose (milk sugar).
Ending a meal with a small piece of cheddar or other aged cheese may help prevent cavities by neutralizing the mouth acid that promote dental decay, given the high fat content of cheese, however rinsing or brushing after meal is a better way to fight cavities.

HEALTH HAZARDS:
Doctors often advise patients with heart disease, elevated blood cholesterol, or high blood pressure to eliminate cheese from their diets, because of most cheese is high in cholesterol and its fat is highly saturated, it increases the risk of ATHEROSCLEROSIS, the clogging of arteries with fatty deposits. Most Cheese is also very high in salt, a hazard for people with high BLOOD PRESSURE.
Aged cheese can trigger a migraine headache in some susceptible people. The likely culprit is tyramine, a naturally occurring chemical in cheddar, blue cheese, Camembert  and certain other ripe cheese. Tyramine also interacts with mono amine oxides (MAO) inhibitors, drugs sometimes used to treat depression and high blood pressure, and can cause a life threatening rise in blood pressure. People taking MAO inhibitors should get a list of food to avoid from their doctor.
People who are allergic to penicillin may react to blue cheese and other soft cheeses that are made with penicillin molds, also those individuals allergic to cow’s milk may react to cheese, especially cottage and other fresh cheese. Cheese made from goat’s or sheep’s milk is less likely to be allergenic. Pasteurized milk must be used to make commercial cheese in the United State of America. Occasionally however health food stores and specialty shops sell imported or homemade unpasteurized cheese, such cheese can harbor dangerous salmonella and other bacteria a recent case in point involved several food poisoning deaths on the west coast that were later traced to Mexican cheese made from raw milk.

LOW FAT CHEESES:
Fat gives cheese its rich texture and delicious taste, but is also add calories and cholesterol. About 70 to 80 % of the calories in cheese comes from fat, even reduced fat or part skim milk cheese is high in fat, more than 50 % of the calories in part skim milk mozzarella come from fat, Truly low fat cheese less than 3 grams of fat per ounce, are rare often lack flavor, and tend to be high in salt to improve flavor, sodium phosphate may be used as an emulsifier for a smoother texture. Cholesterol free imitation cheese is often made of soy, or tofu, they can still be high in fat and sodium.
Fresh Cheese made from skim milk for example nonfat ricotta and cottage cheese are low in fat and calories. Whipped or blended versions of these cheeses can be substituted for regular cream cheese which is 90% fat. Strained nonfat yogurt cheese is another possible alternative. To make it line a strainer with cheesecloth, fill it with yogurt, and allow them to drain for several hours.
