0 Chatti Pathiri Kerala Sweet Lasagna Crepes Layered With Sweet Filling

Chatti Pathiri is a layered pastry made in Malabar region of Kerala. You can make both sweet and savoury version, this dish is quite similar like Italian Lasagna. Instead of paste, pancakes made with flour or pastry sheets prepared with all purpose flour are used. You can make any filling but somehow till know i crossed only non vegetarian filling, as the savoury ones are made traditionally with meat filling as like our samosas or puffs. Thank god Srivalli suggested us this sweet chatti pathiri for our this months Indian Cooking Challenge,a monthly event where we cook dishes from various regions of India.

I skipped last months challenge, coz of the sprouts eventhough ill be making soon. But this time i dont want to miss as i seriously want to make these chatti pathiris since a long. For the todays sweet chatti pathiri, we went for a sweet filling with coconut, black sesame seeds, poppy seeds and nuts. Trust me this sweet chatti pathiri are just simply out of the world. The most important ingredient to enhance the authenticity of this dish is white poppy seeds, dont forget to add or skip them. These seeds are used extensively in Malabar cuisine. Chatti Pathiris are made during festivals, or either during a wedding event or else especially for Iftar. If you have a sweet tooth, these sweetened chatti pathiri will definitely satisfy your sweet tooth.

Recipe Source: Anitha Menon
For Pathiris:
1cup All purpose flour
1/3 cup warm water
1 tbsp vegetable oil
salt to taste

For Filling:
1/2tin Sweetened condensed milk
4tbsp black sesame seeds
7tbsp  Grated coconut
3tbsp Raisins
3tbsp Cashew nuts(Chopped finely)
3tbsp Almonds (chopped finely)
4tbsp Poppy seeds
3tbsp Cardamom powder

For coating:
1+1/2 cups Coconut milk (store bought)
1tbsp Cardamom powder
4tbsp Powdered sugar
2tsp Ghee

For Pathiris:
Mix the flour with water, oil and salt and knead into a dough like that of chappati.

Keep it covered for half an hour.

Divide the dough into 7-8 equal portions.

Using a roller pin, roll it out into paper-thin chappaties on a dusted flour board.

Heat a griddle and cook the chappatis/round flat bread lightly on a tawa.

Keep them aside. You should be able to get 7-8 chappathis with this amount.

For filling:
Heat a Large frying pan.Add ghee and saute raisins, cashew nuts, poppy seeds, almonds, sesame seeds till seem a little golden brown .

Then saute grated coconut along with cardamom powder until they start to change the colour slightly.

Mix the above with half a tin of condensed milk and keep aside, check the level of sweetness.

Add more condensed milk if required.

For coating and assembling:
Add to the coconut milk, cardamom powder and powdered sugar and keep aside.

Take a non-stick round baking pan, spread couple of tsps oil or ghee / clarified butter all around the pan

Keep one pathiri/flat bread as the first layer.

Using a spoon sprinkle the nut mix filling on top of the pathiri/flat bread.

Dip the second chappathi/flat bread in the coconut milk mixture, coat well and place it on top of the filling.

Sprinkle the condensed milk -nut mixture again and repeat this until all the pathiris, the coconut milk mix and the nut mixture is used up and pathiri being the top layer.

Pour the remaining coconut milk mixture generouly on top of pathiri , so that it drains on all the gaps on sides and form a thin layer on top.

This is important to keep the Chatti Pathiri moist. If you run out of the coconut milk mixture after coating, make more and mix with sufficient sugar and cardamom and pour on top.

Preheat the oven to 350F.

Bake in oven for about 15 minutes or until the top of pathiri turns golden.

After it cooled down a little, drizzled it with some more condensed milk and decorated it with dessicated coconut.

Notes:
Alternately u can cook it on a stove top in a non stick deep skillet or deep pan.

You have to place it at a very low flame and flip it caully to cook on the other side. The flipping becomes a bit easy when the lowest layer of flat bread/pathiri is a little hard.

When both the sides have cooked well, it is easy to slide it out of the pan into the serving plate.

You can add cherries or fruits to decorate the top of the chatti pathiri, but i skipped it and used just dessicated coconut.

0 Sweet Potato Fritters With Apples Thanksgiving Begins

For the first time in years, I’m not making Thanksgiving dinner for my family. Instead, we’re heading off to Ohio, the homeland of HOTUS (formerly Husband-Elect), for a holiday with his extended brood. This is simultaneously super exciting and somewhat disorienting.

Here’s why: I’m fairly laid-back in general, but on Turkey Day (and I freely admit this), I’m a Type A, micromanaging battleaxe. There are week-long searches for appropriate recipes. There are minute-by-minute schedules. There are dozens of papers taped to the kitchen cabinets. I barely tolerate myself on Thanksgiving, so I’m not sure how my parents have held up.

And this year, I’ll have no control whatsoever. Ack.

Instead, Imma take it out on CHG. Ha! Prepare yourself, sweet readers, for an onslaught of Thanksgivingy blogginess like you’ve never seen before. There will be appetizers. There will be side dishes. There will be main dishes. There will probably be an unrelated recipe, because not everything works like we plan sometimes. MUAHAHAHAHAHA!

Today’s recipe, Sweet Potato Fritters with Apples, is an inexpensive, fairly nutritional dish suitable for either Thanksgiving breakfast or a dinner side. Crunchy on the outside and softer on the inside, theyre sweet without being cloying. HOTUS loved them for dinner last night, which is good, because he’s getting them for lunch again today.

If you should make them yourself, know two things:

1) The calculations in the source material felt a little off, so I did my own numbers using Calorie King. And – yoinks - they were significantly different. Mine are the ones posted, though, because that’s how we roll

2) Any decent cooking apple should work here. I used MacIntosh, because they’re good all-around varieties, but y’know, go crazy.

And so it begins. Readers, do you have a solid Turkey Day recipe for us? Do tell. We’d love to give it a shot.

Sweet Potato Fritters With Apples
Makes 16 fritters.
Adapted from The Complete Idiot’s Guide to Eating on a Budget.

1 cup cooked sweet potato, mashed
1 apple, peeled, cored, and diced small (I used a MacIntosh - Kris)
1/2 cup low-fat cottage cheese (I used 1% Friendship – Kris)
1/2 cup all-purpose flour
1/4 cup sugar
1 large egg
1 teaspoon cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter
Honey, maple syrup, or powdered sugar for serving

NOTE: If you don’t have any cooked, mashed sweet potato hanging around, buy a large spud, scrub the outside, prick it a few times with a fork, and cook for 50 or 60 minutes at 375°F. Remove from oven, let it cool, peel, scoop, and mash.

1) In a mixing bowl, stir together sweet potato, apple, cottage cheese, flour, sugar, egg, cinnamon, baking powder, and salt. Divide the dough in half.

2) In a large, nonstick skillet over medium-high heat, melt 1 tablespoon butter. Divide half the dough into eight rounded tablespoons. Drop each tablespoon into skillet, taking care not to crowd. Flatten dough balls with spoon, until about 1/2- to 3/4-inch thick. Cook 3 to 5 minutes on each side, until browned. Remove to a paper towel-covered plate.

3) Repeat Step #2 with the remaining half of butter and dough.

4) Serve warm with honey, maple syrup, or powdered sugar.

0 Less Sweet Foods To Avoid Alzheimers

Unhealthy diet as fond of sweets and processed foods have been shown to increase the risk of type 2 diabetes. But recent research suggests that it is also at risk for Alzheimers disease or diabetes are often mentioned type 3.

The bodys cells need glucose from food for energy. The hormone insulin produced in the pancreas to help the bodys cells take up glucose from the blood stream, where the cells then process it into energy. If there is excess glucose in the bloodstream from eating too much sweet food, the pancreas produces more insulin so that insulin resistance in the cells of the body can be increased.
If the cells in the brain also becomes resistant to insulin, the brain does not get enough energy and his condition could worsen. Brain cells are starved of energy can lead to memory loss and confusion are symptoms of Alzheimers disease. But its never too late to protect the brain from Alzheimer threat. We are recommends the following precautions:

1. Keep your body weight to remain stable

If you weigh and measure waist circumference regularly, youll know if your weight has increased or not. So you can prevent obesity early on. Obesity is also linked to insulin resistance.

2. Eat less meat

With a diet of plant-based foods, such as fruits, vegetables, whole grains, and reducing the consumption of meat can make the body more healthy and avoid obesity.

3. Reduce consumption of sugar

Sugar has been linked to diabetes type 2 and 3, so you need to eat less everyday. Avoid eating packaged foods often contain artificial sweeteners.

4. Cooking meals at home

By cooking your own meals, you can assure yourself the materials you use are the best and healthier.

5. Avoid nitrate

Research shows that there is a link between Alzheimers with the consumption of foods containing nitrosamines. Protect yourself by avoiding processed foods that contain nitrates on the label. Processed foods include cheese, hot dogs, beef, and bacon.
